Tasting Notes: Dark plum & chocolate
This has earthy, dark berry aromas along with hints of licorice and anise. The palate is medium-bodied showing dark plum, chocolate and spice flavours, finishing with soft tannins.
Background Information: This wine has won 2 Trophies, 2 Gold Medals, 4 Silver Medals & 9 Bronze Medals.
It is made using the ‘traditional method’ of making sparkling wine and sourced from a property which knows a thing or two about making good bubbles. Previously this has only been sold through the winery’s busy cellar door.
The winery is very proud of this Sparkling Shiraz and has taken much time and effort in producing it. The 2004 vintage was very good with ripe fruit aplenty. The juice spent 5 days on skins in open top fermenters, followed by gentle pressing to tank and then racking off the yeast lees to small and large vats for 2 years oak maturation. Once in bottle the wine went through its secondary fermentation before another 2 years of bottle maturation.
